My dog is 1.5 years old and can not stand being in his kennel when I leave the house. When I get back there is a crazy amount of drool and slobber on his face and on the floor. It has gotten even worse lately with him paying at the door until his foot was bleeding. He even starts to bark non-stop when I place him on a zip line in the back yard.

The drooling means he's claustrophobic, I know it sounds crazy but my mothers dog did the exact same thing, no matter how much she worked on training her to like the crate my mom would come home to a dog that was soaking wet and a crate tray full of slobber and drool. The only remedy was for her to put the dog in the bathroom with a baby gate up. The dog was much happier in there, maybe you can try using the kitchen and blocking it off with baby gates, he might be happier.
As for the barking in the back yard is this all the exercise he gets? If he's left alone in the back yard to run on the zip line then he's bored and frustrated, frustrated dogs bark to relieve frustration. If you are out there playing with him then he is probably less likely to bark, or if he's being taken for long walks or runs then he will be less likely to bark.
I'd try leaving him in the kitchen when you go out, you'll probably find he does a lot better.

My dog destroyed the plastic tray in her crate due to severe separation anxiety. Does anyone know a good place online where I can order another one?

Depending what brand it is, go on-line an google the manufacturer - they all sell parts for their crates.
If it's a smaller crate, as a last resort, take measurements and you may be able to find the right size metal sheet pan with edges at a restaurant supply outlet. Don't laugh, they work but it depends on the size of the crate. Whole and half sheet pans.
